Stuffed Pork Tenderloin
1/3 cup chopped onion
1 clove garlic, minced
1 tablespoon stick butter or margarine
1 small tart apple, peeled, cored, and finely chopped

I love this salad when corn is abundant in the summer time, but frozen corn works
equally well.
8 ears fresh corn, or 2 cans of whole kernel corn, or 2 cups frozen corn
1 tomato, chopped
1 zucchini, chopped
1 cucumber, peeled and chopped
