Chocolate Pecan Bars

1 1/4 cups un-sifted flour

1 cup confectioners’ sugar

½ cup cocoa

1 cup cold butter or margarine

1 (14 oz) can sweetened condensed milk (NOT evaporated milk)

1 egg

2 teaspoons vanilla extract

1 ½ cups chopped pecans

Preheat oven to 350 degrees (325 for glass dish). In a large bowl, combine flour, sugar and coca; cut in butter until crumbly (mixture will be dry). Press firmly on bottom of 13×9 baking dish. Bake 15 minutes. Meanwhile, in medium bowl, beat sweetened condensed milk, egg and vanilla, mix well. Stir in nuts. Spread evenly over crust. Bake 25 minutes or until lightly browned. Cool completely. Cut into bars. Store in covered dish in refrigerator. Yield: 24 to 36 bars.

Simply Garlic Vinaigrette
Makes about 2/3 cup

1/4 cup balsamic vinegar
1/4 cup flax oil or extra virgin olive oil
4 tsp. sweetner or sugar
1 Tbsp. water
1 Tbsp. Simply Garlic Seasoning Blend

Place all ingredients in Quick Shake Container, seal and shake until well blended. Garlic flavor will intensify with time.

Simply Garlic Roasted Chicken

1 (3 1/2 – 4 lb.) roasting chicken, rinsed and cleaned
1-2 Tbsp. Simply Garlic Seasoning
1 medium onion, peeled

Place chicken on Cooking Rack in Base of Oval Microwave Cooker with Deep Colander Ring placed on top. Generously season with Seasoning outside of chicken and inside cavity; add onion to cavity. Cover and microwave on High for 7-7 1/2 minutes per pound until internal temperature reaches a minimum of 170°F. Chicken will continue cooking in Oval Microwave Cooker; allow resting time of 5-10 minutes before slicing.

Roasted Garlic Potatoes
Makes 4 servings

1 (1 lb. 4 oz.) pkg. red potatoes, 1/4″ slices
2 Tbsp. extra virgin olive oil
1-2 Tbsp. Simply Garlic Seasoning

Apple Dumplings

Our Grandma loves apple dumplings. I thought you might enjoy the recipe, too.

Apple Dumplings

INGREDIENTS:
2 to 2 1/2 cup flour
2 teaspoons baking powder
1 teaspoon salt
3/4 cup shortening
1/2 cup milk
4 to 6 Granny Smith or other cooking apples, cored, peeled, and sliced
sugar, approximately 1/2 cup, for sprinkling apples
cinnamon
nutmeg
butter, cut in small pieces

Syrup:
2 cups sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups hot water
1/4 cup margarine melted
heavy cream or ice cream, optional

PREPARATION:
Combine flour, baking powder and salt; cut in shortening until mixture resembles coarse meal. Gradually add milk, stirring to make a soft dough. Roll dough into a 1/8″ thick rectangle on a lightly floured surface; cut into 5-inch squares.
Place 3 or 4 pieces of apple on each square.

Sprinkle each with 2 teaspoons sugar and a sprinkling cinnamon and nutmeg to taste; dot with butter. Moisten edges of each dumpling with water; bring corners to center, pinching edges to seal. Place dumplings 1 inch apart in a lightly greased shallow baking dish. Combine 2 cups sugar, 1/4 teaspoon cinnamon, 1/4 teaspoon nutmeg, 2 cups hot water and 1/4 cup butter or margarine; stir to dissolve sugar. Pour syrup over dumplings. Bake at 375° for 35 to 45 minutes, or until golden brown. Serve hot with cream or ice cream.
Makes about 1 dozen apple dumplings.
Dumplings can also be frozen individually

Peanut Butter And Jelly French Toast

1 egg

1 teaspoon milk All the fixings of a peanut butter and jelly sandwhich (bread and peanut butter and jelly)powdered sugar

Beat egg and milk and place in a shallow bowl. Make a two peanut butter and jelly sandwhiches as you normally would.

Dip sandwich in the egg mixture – gently soaking the exposed outer sides of the sandwhich.

Fry each side of sandwhich at medium heat until golden brown. Repeat with other sandwhich.

Serve sprinkled with powdered sugar.

(2 servings)
